I believe that it’s the combination of sauce along with the succulent meatloaves. The creamy Parmesan sauce is excellent and it is really simple to make also. Only a couple ingredients, a couple moments cooking, and you also have really an addicting, tasty sauce.

I believe that it’s the combination of sauce along with the succulent meatloaves. The creamy Parmesan sauce is excellent and it is really simple to make also. Only a couple ingredients, a couple moments cooking, and you also have really an addicting, tasty sauce.
Recipe Notes:
- Gluten-Free: you may use 2 pieces of gluten-free bread rather than bread crumbs from the real meatloaves.
- For the sauce, I simply remove the flour all together, but if you do want to thicken the sauce, use gluten free flour or 1/2 tbsp corn starch (combine corn starch with a splash of cold water before adding to heavy cream).

Ingredients
For the Meatloaves
- ½ yellow onion diced (about ½ cup diced)
- ¾ cup bread crumbs or 2 slices of dense bread crumbled
- 2 lbs ground chicken
- 8-10 garlic cloves pressed
- fresh cracked black pepper
- 1 egg
- 3 tbsp fresh minced parsley
- 3 oz fresh grated Parmesan cheese
- salt
- extra fresh grated Parmesan cheese to top (optional)
For the Sauce
- 1 ½ cups heavy whipping cream
- 1 tbsp minced fresh parsley
- 1 tbsp flour
- 3 garlic cloves
- 3 oz fresh grated Parmesan cheese
- salt
- 2 tbsp olive oil
Instructions
For the Meatloaves
- Preheat oven to 375 and grease a muffin baking-pan.
- In a large bowl, combine ground chicken, diced yellow onion, bread crumbs, pressed garlic, egg, fresh grated Parmesan cheese, parsley, pepper and salt.
- Mix very well till all ingredients are evenly incorporated.
- Form balls of ground chicken mix large enough to fill a muffin cup entirely. Press them into a muffin cup. You are able to add some fresh grated Parmesan cheese on the top.
- Then bake for 23-25 minutes.
For the Sauce
- Preheat a sauce pot over medium-heat. Then add oil and pressed garlic.
- Saute garlic just till aromatic and whisk in flour.
- Start slowly pouring whipping cream while whisking. Season with some salt and allow the mixture heath however, stirring frequently.
- When the heavy cream mix in hot (but not boiling), whisk in fresh grated Parmesan cheese. Keep mixing gradually until the cheese is melted and incorporated.
- Stir in parsley and remove for heat. Then top every mini-meatloaf with sauce.
- Serve and enjoy!
